Gallic acid ester compounds can be synthesized from gallic acid. The alkyl esters of gallic acid can be divided into lower esters (such as methyl ester, ethyl ester, propyl ester, etc.) and higher esters (such as octyl ester, lauryl ester, octadecanol ester, etc.) according to the number of alkyl carbon atoms. In the 1980 s, Japan has used antioxidant G1000, EG-5 emulsion and EG-5 oil agent composed of 95% gallic acid and other additives, especially propyl gallate as antioxidant, which can be used to prevent rancid deterioration of edible oil. Propyl gallate (PG) has been approved for use in many countries and is produced in Japan, the United States, Germany and Britain. Most of the foreign aquatic products are converted to dip or spray gallic acid as an antioxidant.
